Change log similar to CE

Feature Request: Estimate Change Log

Summary:
Enable users to view a change log for estimates in BOE Pro, similar to the functionality available in CE. The log should show when an estimate was changed, who made the change, and provide visibility into estimate update history.

Problem Statement:
Currently, users do not have an easy way to see when estimates were changed or who made those changes. This lack of visibility makes it difficult to audit updates, understand the source of changes, and maintain confidence in estimate accuracy.

Proposed Solution:
Add a change log feature for estimates that records each update made in the system.
Display the name of the user who made the change and the timestamp for when the change occurred.
Present the information in a clear, accessible format similar to the existing CE change log experience.
Ensure users can quickly review estimate history without disrupting their current workflow.
